Colossal Cookies
1/2 cup butter
1 1/2 cups granulated sugar
1 1/2 cups firmly packed brown sugar
4 eggs
1 teaspoon vanilla
1 jar [18 oz.] chunk-style peanut butter
6 cups quick or old-fashioned oats, uncooked
1 pkg. [6 oz] semi-sweet chocolate pieces
2 1/2 teaspoons soda
Heat oven to 350 degrees. In an 8 quart saucepot or turkey roaster, beat together butter and sugars; blend in eggs and vanilla. Add peanut butter; mix well. Stir in oats, chocolate pieces and soda, mixing well.
Drop, by scant 1/4 cup dry measure, about 4 inches apart onto ungreased cookie sheet. Flatten with fork to 2 1/2 inches in diameter.
Bake 10-12 minutes. Cool 1 minute on cookie sheet; remvoe to wire cooling rack. Store tightly covered.
To freeze cookie dough, measure scant 1/4 cup dough for each cookie. Place on cookie sheet; do not flatten. Freeze until firm. Store in plastic bags in freezer. When ready to bake, place dough on greased cookie sheet. Let stand at room temperature about 30 minutes. Flatten with fork. Bake as directed.
