Herbed Vinegar
Wash fresh herbs, shake and blot dry with a towel. Remove the leaves and tips and fill a glass jar or bottle with them. Cover them with vinegar, top with nonmetal cap and store in a cool place for a month.
*Note: you can speed up the flavoring process by heating the vinegar to just below boiling before pouring it over the herbs.
