Whether for a game day munchie or a party appetizer, these Spicy Salmon Nachos are an easy, addicting treat! I am an official ambassador for Chicken of the Sea. Salmon Nachos
In college, we’d come home from a night out and head to the sorority dining room with a bag of tortilla chips and a hunk of cheese from the all-night mini-market. Piled on a paper plate and microwaved, we had instant nachos. They always hit the spot. Sometimes I’d eat a platter of nachos for dinner at the hole in the wall Mexican restaurant we frequented. Those had pickled jalapenos—a definitely step up. And on occasion, we’d head to a “finer” establishment where shredded chicken, refried beans and the works were offered on their version. I loved them all. So when Chicken of the Sea asked me to develop a recipe for them using their new Flavored Salmon Pouches, I had a hankering for nachos and created a salmon version

If you’ve only eaten scones that taste like cardboard, you need to make some from scratch. With butter, cream and loads of berries, these Blackberry Scones are a moist, delicious breakfast treat!
Berry Love
Decent raspberries have been scare this winter. A local produce distributor owner saw me poking around the berries at the market one morning. He told me I looked like a discriminating shopper and asked if I knew who he was. After he revealed his name, I let him know that I was friends with two of his daughers-in-law. A gregarious fellow, he went on to explain why the crops weren’t up to snuff this year and why this drove up prices. I didn’t find the berries I was looking for that day, but at least I knew I wasn’t alone! Weeks later, I spotted some plump blackberries and snatched them up. I knew they’d be perfect for my scones.

Potato Galette
I’ve made numerous potato galettes for my spud loving family, but this time, I pulled out all the stops. Fried, mashed and roasted potatoes are commonplace though always a welcome side dish at Chez Skinny Chick. But taking a little extra time to break out the mandolin and grate a little cheese made for a happy crew.

It’s Hot Chocolate Weather!
It was a sad day in our house. There were NO homemade desserts and Bill was scrounging in the pantry for some Mega-Stuf Oreos. I had been wanting to share this Cioccolata Calda, or Italian Hot Chocolate, for the past couple months. It was finally cold enough to feel right. When I offered this up for dessert, there were no objections.

Whether or not you’ll be glued to the TV when the big game is on, these Chocolate Football Cookies are the perfect halftime snack! Our teams are both out of the running, so the tension of the regular season and playoffs has lifted and I can fill the kitchen with delectable game day dishes!
Chocolate Football Cookies
Though my cookie decorating skills are limited, I was hoping I could pipe some laces onto football shaped cookies. With fingers and toes crossed, I began the process, using melted white chocolate to create the lines. Whew. Most looked OK. My family (major football fanatics) were impressed. Well, until I told them the cookies were off limits till I did a couple morning spiels for our local Fox and CBS stations. To make them extra tempting, I piped some vanilla buttercream to make a wall around the perimeter of one cookie, filled the well with a spoonful of caramel sauce, then topped with a second cookie garnished with a lace. Chocolate sugar cookies are nice, but frosting makes them truly memorable! And a dab of caramel never hurts, either
