Mustard Encrusted Salmon with Spinach


Blue Crab Bay Recipe : Mustard Encrusted Salmon with Spinach

Ingredients
  • 2 8 oz. salmon fillets
  • 2 tbsp. Blue Crab Bay® Spicy Bay Mustard with horseradish
  • 2 tbsp. mayonnaise
  • 1 tbsp. Blue Crab Bay® Salmon Seasoning
  • 1/3 cup panko bread crumbs
  • 2 tsp. extra virgin olive oil
  • 3 cloves crushed garlic
  • 9 oz. bag fresh spinach
Instructions
Place salmon fillets in lightly oiled baking dish. In a small bowl, combine mustard, mayonnaise and salmon seasoning. Slather onto salmon fillets, then top those with panko bread crumbs. Bake at 400 degrees for 12 to 15 minutes, or until panko is golden brown. While salmon is baking, sauté crushed garlic in olive oil, add spinach and cook just to wilt. Place baked salmon atop wilted spinach and garnish with fresh lemon.
