CHICKEN PARMIGIANA
INGREDIENTS
chicken breasts
flour
eggs
breadcrumbs
olive oil
Greg's Spaghetti Sauce (x2)
salt and pepper to taste
fontina (or mozzarella) cheese
parmesan cheese
parsley
DIRECTIONS
1. Pound chicken breast
2. Roll chicken in flour
3. Dip chicken in eggs and coat with bread crumbs
4. Fry coated chicken in hot olive oil and drain on paper towels
5. Coat the bottom of a 9x13 baking dish with spaghetti sauce
6. Layer chicken in the pan
7. Cover chicken with remaining sauce
8. Sprinkle with fontina cheese
9. Bake uncovered @ 400 degrees for 20 minutes
10. Optionally sprinkle with parmesan cheese with a few minutes remaining
11. Garnish with parsley
