TORTILLA BLACK BEAN CASSEROLE
This Mexican dish is my sister-in-law Cynthia's recipe - delicious !!
INGREDIENTS
1 medium onion, chopped
1 small green pepper, chopped
2 cloves of garlic, minced
2 tsp ground cumin
1 dash of crushed red pepper
3/4 cup Picante sauce
2 (15-oz) cans of black beans
1 (14-oz) can of undrained diced tomatoes
1 pkg of 12 corn tortillas
2 cups of low fat Mozzarella cheese
TOPPINGS
Shredded lettuce
Chopped tomato
Salsa
Sour cream
Sliced black olives
DIRECTIONS
1. Saute top 3 ingredients until translucent. Add 2 tsp of cumin, and picante sauce, and tomatoes. Bring to a boil. Then simmer for 10 minutes. Drain black beans and add to mixture. Layer dish with 1/3 of the bean mixture on bottom. Layer 1/2 of the tortillas, and cheese. Repeat again with bean mixture on top. Bake at 350 degrees for 30 minutes. Sprinkle with cheese and let stand for 10 minutes.
2. Top with toppings prior to serving.
