Savory Lamb Chops with Dijon Molasses Glaze
Ingredients
- 2 tsps. olive oil
- 2 tbls. shallots, finely chopped
- 1/4 cup BRER RABBIT Molasses
- 2 tbls. Dijon mustard
- 1 tablespoon REGINA Red Wine Vinegar
- 4-6 1 inch thick bone-in lamb chops
Directions
In small saucepan, heat oil over medium heat and cook shallots, stirring occasionally, 2 to 3 minutes or until golden brown. Stir in molasses, mustard and vinegar. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Meanwhile, season lamb chops with salt and pepper. Arrange on broiler rack and generously brush with molasses glaze. Broil, turning once and brushing with additional glaze, until desired doneness.
