RIPE OLIVE AND GOAT-CHEESE SANDWICHES

Cut these adorable finger sandwiches into stars and other fanciful shapes -- or simple triangles if you're pressed for time.

Ingredients

1 cup pitted ripe olives
4 ounces mild goat cheese
1 small garlic clove, minced
1 green onion(scallion), minced
1/4 teaspoon hot red-pepper sauce, or to taste
24 slices thin-sliced white bread, crust trimmed
1/2 cup finely minced parsley

Directions

  1. In a food processor, chop olives and add goat cheese, garlic, and green onion. Season with red-pepper sauce. (Can be made up to 1 day ahead to this point. Cover and refrigerate.)
  2. Spread about a tablespoon of filling on 12 of the bread slices, and top with remaining slices. Use a cookie cutter to cut into shapes, or alternatively, cut each sandwich into triangles. Dip cut edges in minced parsley.
