Taco Lasagne

Taco Lasagne
Serves: 8-10
* Jane's Adventures in Dinner
 
Ingredients
  • Pasta:
  • 3 cups of flour
  • 3 eggs
  • pinch of salt
  • Meat layer:
  • 1 lb ground beef (I've made this with veggie ground round too and no one noticed)
  • 2 tsp chilli powder
  • ½ tsp chipotle
  • 2 crushed garlic cloves
  • 1 cup chopped onion
  • 1 tsp cumin
  • 1st Salsa layer:
  • ¾ cup green salsa
  • 2nd Salsa layer:
  • ½ cup chopped peppers
  • ¾ cup red salsa
  • ½ cup chopped peppers
  • ¾ cup ricotta
  • 2 cups shredded cheddar cheese
Instructions
  1. For the pasta; mix the ingredients together and knead until smooth (if dry add a tsp or 2 of water). Let sit (covered) for 10 minutes to relax. Roll out to ¼ inch thick and cut into 3 pieces large enough to cover your pan.
  2. Cook beef with onions and spices.
  3. Assemble: grease a large roasting pan. Add first salsa layer and top with a piece of the pasta. Sprinkle on ¼ cup of cheese and add half the meat before topping with another ¼ cup of cheese and pasta. Add the second salsa layer (dotting the ricotta over the entire thing) and then the last piece of pasta. Add the rest of the meat and the remaining cheese.
  4. Bake 350 degrees for 45-60 minutes or until the whole thing feels firm to the touch. Let rest 10-15 minutes before cutting.
