Double Mint Ice Cream Pie
One of my favorite warm weather desserts is a refreshing ice cream pie. This pie is even more refreshing, because it's made with chocolate-mint ice cream and Mint Oreos. The Mint Oreos are always found during the Christmas holidays. They are a little bit harder to find during the summer months. Just in case, I buy extra packages in December and freeze them for summer use.
