BISQUICK ITALIAN PIZZA BAKE

This heart-smart recipe for two is perfect for a comforting meal a deux.
Bisquick Italian Pizza Bake

Ingredients:

  • 1/3 cup Bisquick Heart Smart mix
  • 2 tablespoons fat-free egg product or 1 egg white
  • 1 tablespoon water
  • 1/8 teaspoon garlic powder
  • 1/4 cup green or yellow bell pepper, diced
  • 1/4 cup onion, chopped
  • 1/2 cup cooked chicken breast, cut into pieces
  • 1/2 cup diced tomatoes with Italian-style herbs, drained (from 14.5-ounce can)
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup reduced-fat mozzarella cheese, shredded

Directions:

  1. Heat oven to 400 degrees F.
  2. Spray an 8 x 4-inch loaf pan with cooking spray.
  3. In a small bowl, combine Bisquick mix, egg product, water and garlic powder. Pour into pan.
  4. Cook bell pepper and onion in a skillet over medium-high heat, stirring frequently, until tender.
  5. Stir in chicken, tomatoes and Italian seasoning, and cook until hot.
  6. Spoon mixture over the batter, and then sprinkle with cheese.
  7. Bake about 20 to 23 minutes or until golden brown. Loosen from sides before cutting to serve.
