Patience Candy

Ingredients:


4 Cups white sugar
1 1/2 cups milk
3 Tablespoons butter
1 1/2 teaspoons vanilla
1/2 cup (or more) chopped nuts, pecans, black
walnuts, or English walnuts




Directions:


Put a little over half of the sugar and all of the milk in a heavy kettle and slowly bring to a boil, stirring often. At the same time put the rest of the sugar in a heavy frying pan and heat slowly until it melts. Stir often, be careful not to burn.. it will turn a lovely golden brown. When sugar is melted, pour it SLOWLY into the boiling milk,STIRRING ALL THE WHILE. Be careful, it will boil up and over! Continue boiling until it forms firm ball when tested (about 242 º) Take off heat, and add vanilla and butter. Beat, beat, beat until it turn turns from a shinny mass to dull & stiff. Quickly add nut meats and pour into buttered platter. Cut into squares before it gets completely cold.
