Mama Philly's Honey Balls


Here's a struffoli recipe that works every time! Shared by a friend, it is an old family recipe passed down through generations.
Ingredients
4 cups flour
3 teaspoons baking powder
6 eggs
1 1/2 teaspoons vanilla
3/4 cup confectioners sugar
3 cups shortening for frying
1 1/2 cups GOLDEN BLOSSOM HONEY
colored sprinkles for garnish
Directions
In a medium size bowl, mix together flour and baking powder. In a large bowl mix together eggs, vanilla and confectioners sugar. Stir flour mixture into egg mixture until combined. Knead gently for 3 minutes on a floured surface. Do not over knead.
Break off chunks of dough and roll into long thin ropes or logs. Cut into 1/2 inch pieces.
Heat the shortening over very hot heat. Test one or two balls to be sure they sizzle before adding more. Fry balls in batches until golden brown, turning with a spoon. Drain on paper towels. Continue frying balls in batches until they are all golden.
Meanwhile, heat honey until thin. Do not boil. Place balls in a large container with a lid. Pour honey over them and toss. Put lid on container and turn several times to distribute honey evenly. Before serving, turn container again to recoat balls, dust with colored sprinkles if desired.
