Tuna Casserole

Tuna Casserole

2 Cans of Tuna in water drained (Albacore Tuna is so good in this recipe)
1 can or 1 package of Frozen Peas thawed
3 cups of crushed Better Made Potato Chips (I use the Rainbow Chips if available)
3 Tablespoons of Melted Butter
2 1/2 cups of Milk
3 Tablespoons of Flour
Salt, Pepper, and Nutmeg to your taste
Cayenne Pepper .. a Dash is optional

9 X 13 Casserole Dish....spray with Pam. Crush the 3 cups of chips and mix with 3 Tablespoons of Melted Butter ... spread 2 cups of the crushed chips in the bottom of the Dish and pat down. Make a white sauce: Mix the following ingredients together and whisk over a low heat until combined and thickened .. cooking the flour taste out.

2 cups of milk
3 TBSP of Flour
1/8 tsp of Pepper
1/4 tsp of Salt
1/4 tsp of Nutmeg .. freshly grated
Just a Dash of Cayenne Pepper (optional)
Cook 1 package of egg noodles according to directions and drain.

Mix the Tuna, egg noodles, and Peas with the white sauce, and pour into the chip lined casserole dish. Top with crushed Better Made Potato Chips. Bake in the oven for 40 minutes. Let set for 5 minutes and serve. The crunch and taste of the chips on the bottom and the top make this dish really delicious.
