Yield: 12-16
Ingredients
    For the blondies
  • 3 sticks unsalted butter
  • 2 cups light brown sugar
  • 1/2 cup sugar
  • 4 eggs
  • 2t. vanilla bean paste
  • 3 cups cake flour
  • 2t. baking powder
  • 1t. salt
  • Goat Cheese Filling
  • 4 ounces goat cheese - I use Vermont Creamery
  • 2 ounces cream cheese
  • 2 Tablespoons sugar
  • 2 egg yolks
  • 1 teaspoon vanilla bean paste or extract
  • 1.5 oz. sour cream
  • 3/4 cup vanilla roasted strawberries
Instructions
    Blondie batter
  1. Cream butter and sugars till light and fluffy.
  2. Add eggs and vanilla bean paste.
  3. Mix in dry ingredients.
  4. Strawberry Goat Cheese Filling
  5. Cream goat cheese and cream cheese till smooth.
  6. Add sugar.
  7. Add yolks and vanilla.
  8. Mix in sour cream and 1/2 cup roasted strawberries.
  9. Assembly
  10. Pre-heat oven to 350 degrees and line a 9×13 pan with parchment paper and pan spray.
  11. Place about three quarters of the blondie batter in the pan.
  12. Spoon on some of the goat cheese filling and swirl together with a toothpick.
  13. Dollop the remaining blondie batter on top.
  14. Spoon on some more goat cheese filling.
  15. Swirl with a toothpick again.
  16. Drop remaining 1/4 cup roasted strawberries on top of blondies and slightly push down. You want to see them on top.
  17. Bake at 350 degrees for 35-40 minutes rotating once halfway through.
  18. Refrigerate the blondies over night before serving.
