Cranberry Peanut M&M Oatmeal Cookies
Yield: 5 large cookies
Ingredients
  • 4 ounces unsalted butter, room temp
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 3/4 cup AP flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 & 1/2 cups oats
  • 1/4 cup dried cranberries
  • 1/2 cup peanut M&Ms
Instructions
  1. Cream butter and sugars till light and fluffy.
  2. Add egg and extract.
  3. Mix in flour, salt, and baking soda.
  4. Mix in oats and dried cranberries.
  5. Gently mix in M&Ms.
  6. Divide dough in to 4 ounce portions and chill a few hours to over night.
  7. Bake cookies at 325 degrees for 21-22 minutes rotating once halfway through.
Notes
Make sure cookies are cold when they go in the oven so they bake evenly.
Take cookies out of the oven when they are just about 45 seconds from done because they will continue to bake once you take them out.
Store cookies in an air tight container at room temp when baked.
Cookies can be made smaller if you prefer. Just remember bake time will be different. For 1/2 ounce cookies: Bake at 325 degrees for 14-15 minutes.
