BISQUICK ZUCCHINI CAKES

These zucchini cakes are a perfect party appetizer — and they pack a hearty amount of nutritious zucchini, so you can feel good about popping these tasty little cakes.
Ingredients:
- 5 tablespoons Bisquick baking mix
- 2 eggs, beaten
- 1/2 cup Parmesan cheese
- 2 tablespoons butter
- 1/4 teaspoon salt
- 2 cups zucchini, grated
- 1/8 teaspoon pepper
Directions:
- Combine the Bisquick, Parmesan, salt, pepper, and then add eggs.
- Fold grated zucchini into the batter.
- Grease a hot pan or griddle with butter.
- Pour batter into pan and fry for about 3 minutes on each side.
