BISQUICK ZUCCHINI CAKES

These zucchini cakes are a perfect party appetizer — and they pack a hearty amount of nutritious zucchini, so you can feel good about popping these tasty little cakes.
Bisquick Zucchini cakes

Ingredients:

  • 5 tablespoons Bisquick baking mix
  • 2 eggs, beaten
  • 1/2 cup Parmesan cheese
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 2 cups zucchini, grated
  • 1/8 teaspoon pepper

Directions:

  1. Combine the Bisquick, Parmesan, salt, pepper, and then add eggs.
  2. Fold grated zucchini into the batter.
  3. Grease a hot pan or griddle with butter.
  4. Pour batter into pan and fry for about 3 minutes on each side.
  5. Serve immediately.
