Roasted Potato Salad
Roasted Potato SaladThis potato salad is made more flavorful and interesting with roasted potatoes and onions, along with some dried or fresh herbs and a well-seasoned mayonnaise and sour cream dressing. I sometimes add a little diced cooked bacon to this potato salad for extra flavor.

Chicken, Kale, and Pasta Bake With Cheese
Chicken, Kale, and Pasta Bake With CheeseI used chopped cooked kale in this casserole, but chard or spinach could also be used. It's a hearty dish, perfect to serve a family any day of the week, or make it for a potluck or large gathering. Casarecce pasta is a slightly twisted, open, tubular shape which holds sauce very well. It worked nicely in this casserole, and I think it would be great in a creamy macaroni and cheese dish as well. You could also use fusilli, campanelle, elbow macaroni, penne, or similar pasta in this dish.
