This loaded sweet potato casserole recipe is similar to loaded baked potatoes, with cheese and bacon, but it is made with sweet potatoes instead. Sweet potatoes are rich in vitamins A and C, and if you keep the skin on, fiber, as well.
The nice thing about this recipe is you can serve it as a hearty side dish (perfect for holidays, parties and potlucks) or add a little meat and make it a one-dish meal. I like to top this casserole with Korean pulled pork. It's a little spicy and balances out the mild, sweet flavor of this sweet potato casserole beautifully.

Ingredients:

  • Loaded Sweet Potato Casserole

    5 lbs. sweet potatoes
  • 4-6 slices bacon
  • 1 cup plain unsweetened Greek yogurt
  • 1/2 cup milk
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly-ground black pepper
  • 1/4 tsp. ground cloves
  • 1-4 dashes hot sauce (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped spring onions (white and light green parts only)

Preparation:

  1. Wash sweet potatoes, prick several times with a fork, and place on a paper towel. Microwave on high until nearly cooked through. The potatoes should still be a little firm, but definitely not raw. The cooking time will depend on the size of the potatoes and the wattage of your microwave oven.

  2. Meanwhile, fry bacon until crisp. Drain on paper towels.

  3. Preheat the oven to 350 degrees F. Spray a 9 x 13 baking dish with cooking spray.

  4. In a large mixing bowl, whisk together the Greek yogurt, milk, salt, pepper, cloves, hot sauce (if using) and Parmesan cheese.

  5. When potatoes are cool, cut into 1/2-inch chunks. Add to the yogurt mixture, and toss well. Transfer to the prepared baking dish, spreading the sweet potatoes out in an even layer.

  6. Crumble the cooked bacon over the sweet potatoes. Top with the cheddar cheese. Bake, uncovered 30-45 minutes until the cheese is melted and the potatoes are cooked through. Scatter the spring onions on top, and serve.
