Surf 'n Turf Fajitas combine the best of both worlds! Juicy steak and tender, buttery shrimp combine with sauteed bell peppers, guacamole, cheese, and sour cream in this easy and delicious recipe.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: Serves 4-6

Ingredients:

  • 1/2 cup sour cream
  • 2 tablespoons Fajita Seasoning Mix, divided [recipe below]
  • 1 (1=pound) ribeye steak
  • 1/2 pound medium cooked shrimp
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 cup guacamole
  • 8 flour tortillas, warmed
  • 1 cup shredded Cheddar cheese

Preparation:

Mix sour cream with one-third of the Fajita Seasoning Mix and set aside. Place steak on plate; sprinkle each side with some of the Fajita Seasoning Mix. Let stand at room temperature for 20 minutes. Toss shrimp with remaining Fajita Seasoning Mix and set aside.
Grill steak or cook in a hot skillet for 5-8 minutes on each side until desired doneness. Remove to plate and cover with foil and let rest. Add shrimp to skillet; cook for 1-2 minutes until warmed through; remove to another plate.
Add peppers to grill or skillet; cook until crisp-tender.
To assemble fajitas, spread guacamole on warmed tortillas. Top with steak, peppers, shrimp, cheese, and seasoned sour cream. Fold up bottom of tortilla, then fold in sides to enclose filling. Serve immediately.

Make your own fajita seasoning mix using this easy recipe. If you are simply going to rub the mixture on steak, chicken, pork, or seafood before grilling it, omit the cornstarch. And be sure to check out my other Homemade Seasoning Mix Recipes and Homemade Mixes!

Ingredients:

  • 3 Tbsp. cornstarch
  • 2 Tbsp. chili powder
  • 1 Tbsp. salt
  • 1 Tbsp. paprika
  • 1 Tbsp. sugar
  • 2-1/2 tsp. crushed chicken bouillon cube
  • 1-1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp cayenne pepper
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 tsp. cumin

Preparation:

Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place. Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.
