Yule Log Recipe
5 large eggs
- 3 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 1/2 cup flour
- 1/2 cup cake flour, sifted
- 1/4 cup unsweetened cocoa powder, sifted
- 2/3 cup sugar
- 1/2 teaspoon salt
- 1 recipe chocolate buttercream frosting
- Powdered sugar, for dusting
Instructions
- Melt the butter and vanilla together in a small saucepan. Set aside.
- Sift together the two flours and the cocoa. Set aside.
- Swirl warm water in a large bowl to warm the bowl. Empty the water.
- Crack the eggs into the bowl and beat them with the sugar and salt until light and fluffy.
- Gently fold the flour into the egg mixture.
- Scoop half of the flour mixture into the butter and mix well.
- Add the flour and butter mixture back into the rest of the flour and stir gently.
- Spread the batter out onto a baking sheet lined with parchment paper.
- Bake at 350 degrees for eight to 12 minutes. Allow to cool for 10 minutes in the pan before turning out.
- Spread a thick layer of chocolate frosting over the cake and roll up like a jelly roll.
- Spread a second layer of frosting over the outside of the cake and drag the tines of a fork through it to create the texture of bark, if desired.
- Dust with powdered sugar and serve.
