Yule Log Recipe

Yule log


5 large eggs

  • 3 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1/2 cup flour
  • 1/2 cup cake flour, sifted
  • 1/4 cup unsweetened cocoa powder, sifted
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1 recipe chocolate buttercream frosting
  • Powdered sugar, for dusting

Instructions

  1. Melt the butter and vanilla together in a small saucepan. Set aside.
  2. Sift together the two flours and the cocoa. Set aside.
  3. Swirl warm water in a large bowl to warm the bowl. Empty the water.
  4. Crack the eggs into the bowl and beat them with the sugar and salt until light and fluffy.
  5. Gently fold the flour into the egg mixture.
  6. Scoop half of the flour mixture into the butter and mix well.
  7. Add the flour and butter mixture back into the rest of the flour and stir gently.
  8. Spread the batter out onto a baking sheet lined with parchment paper.
  9. Bake at 350 degrees for eight to 12 minutes. Allow to cool for 10 minutes in the pan before turning out.
  10. Spread a thick layer of chocolate frosting over the cake and roll up like a jelly roll.
  11. Spread a second layer of frosting over the outside of the cake and drag the tines of a fork through it to create the texture of bark, if desired.
  12. Dust with powdered sugar and serve.
