Marinated Scallops Wrapped in Bacon


Ingredients:
3/4 cup maple syrup
1/4 cup low sodium soy sauce 
1 tbsp dijon mustard 
12 Sea-Trek large sea scallops, halved
12 slices Essential Everyday smoked bacon, halved 
24 toothpicks
2 tbsp brown sugar 

Mix maple syrup, soy sauce and Dijon mustard until smooth. Add scallops, and toss to coat. Cover with plastic wrap and marinate for at least one hour. Preheat oven to 375 degrees F. Arrange bacon pieces on a 10x14 inch pan lined with foil. Do not overlap bacon. Bake until some of the grease has baked out of the bacon; bacon should still be very soft. Remove bacon fron the pan and drain grease. Wrap each scallop with bacon, and secure with a toothpick. Place onto baking sheet. Sprinkle with brown sugar. Bake until scallops are opaque and bacon is crisp, 10 to 15 minutes, turning once.
