Cucumber Peanut Butter Bites

  CUCUMBER PEANUT BUTTER BITES

1 English cucumber
3 tablespoons Smucker's® Natural Creamy Peanut Butter, stirred
2 tablespoons light mayonnaise
1 tablespoon chopped red bell pepper

DIRECTIONS
CUT portion of cucumber into eight 3/4-inch thick rounds. Remove centers with spoon or small melon ball scoop until thin layer of cucumber remains in bottom.
STIR together peanut butter and mayonnaise. Fill center of cucumbers with mixture using melon ball scoop. Top with pieces of red pepper.
