Mexican Street Corn Dip

http://thefoodcharlatan.com/…/mexican-street-corn-dip-reci…/

Elote, or corn on the cob is a popular street food in Mexico, although it is frequently served at home prepared in the same way. It is customarily consumed on a stick, or by grasping the husk of the cob that has been pulled down to form a "handle".

This dip is just like Mexican Street Corn (Elote) but it's in dip-form instead of cob-form. It is the perfect combo of sweet corn and savory tart cheese. Plus it's a lot easier to eat AND you get tortilla chips. Win!
