Beans and Greens under Cornbread
Ingredients
Crisco® Original No-Stick Cooking Spray | |
FILLING | |
tablespoon Crisco® Pure Vegetable Oil | |
large onion, cut into wedges | |
cans great northern beans, drained, rinsed | |
package frozen chopped turnip greens, kale or collards, thawed, drained | |
can diced tomatoes, undrained | |
cup chopped cooked country or sugar-curred ham | |
TOPPING | |
cup Martha White® Self-Rising Enriched White Corn Meal Mix | |
cup milk | |
cup Crisco® Pure Vegetable Oil | |
large egg, beaten |
Preparation Directions
1. | HEAT oven to 425°F. Spray a 13 x 9-inch (3-quart) glass baking dish with no-stick cooking spray. Heat oil in large skillet or Dutch oven over medium-high heat until hot. Add onion; cook 3 to 5 minutes or until onion is crisp-tender, stirring occasionally. |
2. | ADD all remaining filling ingredients; mix well. Cook 2 to 3 minutes or until thoroughly heated, stirring occasionally. Pour into prepared baking dish. |
3. | COMBINE all topping ingredients in medium bowl; stir until smooth. Spoon batter around edge of hot mixture in baking dish. |
4. | BAKE 25 to 30 minutes or until topping is golden brown. |
