Old-Fashioned Christmas Stollen Notes

This is Grandma Erd's recipe that she made for as long as I can remember. 
The Erd Family would gather at Grandma's house on Tichigan Lake every 
Christmas Eve, where she would make all those favorite German foods. Santa 
would come, passing gifts out to all the grandchildren (and there are many), and 
we would all go home with Christmas Stollen to eat in the morning. Her notes 
indicated that some years she would make 5 times the recipe (15 stollens).
Now I have taken up the tradition of making the stolen. I can really appreciate
all the work Grandma did for us year after year for our Christmas Eve celebration
and I thank her for all the great memories she gave us.

  • 1 1/2 cups milk
  • 1/2 cup sugar
  • 1 1/2 teaspoons salt
  • 3/4 cup butter
  • 1 ounce yeast cake*
  • 1 tablespoon sugar
  • 2 whole eggs
  • 2 egg yolks
  • 3 cups sifted all purpose flour
  • 1/2 teaspoon ground cardamon seed
  • 1/2 cup raisins
  • 1/2 cup finely cut citron
  • 1/2 cup sliced candied cherries
  • about 2 2/3 cups sifted all purpose flour
  • For the Powdered Sugar Icing
  • 1 1/2 cups powdered sugar
  • enough cream to make a thick paste
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1. combine all ingredients. Mix until smooth

Serves / Yields
3 stollens
Preparation Instructions
  1. Scald milk. Add sugar, salt and butter. Cool to lukewarm.
  2. Mix yeast with 1 tablespoon sugar until liquid. Add to lukewarm milk. Stir.
  3. Add whole eggs and egg yolks. Beat.
  4. Add 3 cups flour. Bear well. Cover.
  5. Let rise in warm place about 1 1/2 hour or until doubled.
  6. Add cardamon, raisins, citron, cherries and enough flour until dough pulls from side of 
  7. bowl and is no longer sticky to the touch.
  8. Knead on lightly floured surface until smooth and satiny.
  9. Place in lightly greased bowl. Cover. Let rise about 1 1/2 hours or until doubled in bulk.
  10. Divide dough into thirds. Use 1/3 for each stollen.
  11. Roll on floured canvas into and 8x10 inch oval. Spread with melted butter. Press down 
  12. center, fold over lengthwise.
  13. Place in shallow greased baking pans or on greased cooky sheets. Brush with melted butter.
  14. Let rise about 45 minutes or until doubled in bulk.
  15. Bake at 350 degrees about 30 minutes.
  16. Frost with Powdered Sugar Icing. Decorate with cherries citron and blanched almonds.

*If using Active Dry Yeast follow directions on package.

TREE-TRIMMING CIDER PUNCH
INGREDIENTS
1 gallon apple cider
12 whole cloves
2 large apples (such as Granny Smith or Rome Beauty), peeled, left whole
2 cinnamon sticks
Ground nutmeg
PREPARATION
Pour apple cider into large pot. Insert 6 cloves into each apple. Add apples and cinnamon sticks to pot. Bring to boil. Reduce heat; cover and barely simmer over very low heat 1 hour to allow flavors to blend. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.) Ladle hot cider punch into mugs. Sprinkle with nutmeg and serve.

COMPANY'S COMING PASTA CASSEROLE FOR A CROWD
YIELD 4-6

INGREDIENTS
1 lb shell macaroni
4 lbs lean ground beef
4 medium onions, chopped
1 teaspoon garlic powder
1 (28 ounce) can stewed tomatoes
1 (28 ounce) can spaghetti sauce
2 (10 ounce) cans mushroom pieces, with liquid
4 cups sour cream
1 lb medium cheddar, thinly sliced
1 lb mozzarella cheese, thinly sliced


Cook macaroni as directed on package; drain well and set aside. Preheat oven to 350F degrees. In a large frying pan, in batches if necessary, brown ground beef, then transfer to a very large pot. Stir in raw onions, garlic powder, tomatoes, spaghetti sauce, mushrooms and their liquid. Bring to a boil, then simmer, stirring occasionally, for 20 minutes or until onions are tender. Remove from heat. In a large-sized roaster (the kind you'd do a turkey in), spread half the macaroni, then top with half the meat sauce.

Top that with half the sour cream, then half the sliced cheddar. Now top that with the remaining macaroni, then the remaining meat sauce, then the remaining sour cream, then the remaining cheddar. Top with all the mozzarella. Cover roasting pan and bake in preheated oven for 75 minutes, or until hot and bubbling. Remove cover and, if cheese hasn't completely melted, let bake for a few more minutes until it has.

DUKKAH

A mixture of these three spices— along with toasted nuts, salt and garlic—was used to sweeten the coarse bread of daily life in ancient Egypt. That tradition lives on today in dukkah, a popular spice blend that modern Egyptians enjoy just as their ancestors did thousands of years ago. Follow the recipe below to bring a taste of ancient Egypt into your own kitchen. It can be used as a condiment for roasted meat, as a topping for hummus or as a dip for good, crusty bread.
DUKKAH
Start to finish: 30 minutes
Servings: 4
1 cup whole shelled hazelnuts
1 cup whole shelled almonds
1 tablespoon whole coriander seeds
1 tablespoon whole cumin seeds
1/4 cup whole sesame seeds
1/4 teaspoon salt
Preheat oven to 400 degrees. Spread hazelnuts and almonds in a single layer on separate baking sheets and roast for about 10 minutes, shaking the pans every few minutes to prevent scorching. Be especially careful of the nuts in the corners and at the edges, as these will get hot faster. Take the almonds out a minute or two before the hazelnuts, as these are more prone to overheating and turning bitter. Allow nuts to cool completely.
Toast coriander, cumin and sesame seeds in a skillet over high heat for about 3 minutes, stirring constantly. Remove from heat, transfer to a plate and allow to cool completely.
When ingredients have cooled, transfer to a spice grinder or food processor. Add the salt. Pulse all ingredients together until roughly the size of breadcrumbs. Don’t over-process the mixture—you should stop when it’s still dry and coarse.
Serve with bread and good olive oil. Dip bread first into oil, then the dukkah. Can also be used as a dry marinade for meat, or as a topping for hummus.
