150 YEAR OLD LEMON PIE
1/2 c. butter
2 c. sugar
3 soda crackers, rolled finely and sifted
2 lemons, juice and rind
6 whole eggs, well beaten
2 unbaked pie shells
Cream butter and sugar thoroughly. Add sifted cracker crumbs. Add lemon juice and rind. Blend well, until smooth. Add well beaten eggs and blend well. Pour into unbaked pie shells and bake in 375 degree oven from 35-40 minutes.
Makes 2 small pies.
