Wilted Lettuce Salad


5 or 6 strips bacon, cut into bit size pieces
2 Tbsp apple cider vinegar or your favorite
1 Tbsp lemon juice
1 tsp sugar
½ tsp pepper, black, cayenne, or paprika
1 head leaf lettuce, torn into bit size pieces
6 green onions with tops, or 1 small sweet onion sliced
2 hard boiled eggs

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown and crisp. Remove from skillet; set aside.

To the hot bacon drippings, add vinegar, lemon juice, sugar and pepper. Stir over medium heat until hot.

In a large bowl, combine lettuce and green onions. Add bacon and sliced hard boiled eggs. Add the warm dressing and toss to evenly coat. Serve immediately.
