Steamed jam pudding

- Ingredients
- 2/3 cup raspberry jam
- 185g unsalted butter, softened
- 1 cup caster sugar
- 4 eggs
- 1 3/4 cups self-raising flour
- 1 1/4 teaspoons baking powder
- 1/3 cup milk
- Double cream or pure cream, to serve
- Method
- Step 1Grease an 8 cup-capacity metal pudding steamer with butter. Pour jam into base of prepared steamer.
- Step 2Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, 1 at a time, beating until just combined. Sift flour and baking powder over mixture. Add milk. Stir until well combined. Spoon mixture over jam in prepared steamer. Smooth top. Secure lid.
- Step 3Place pudding in a large saucepan. Carefully pour boiling water into pan until halfway up side of steamer. Cover pan. Place over medium heat. Bring to the boil. Reduce heat to low. Simmer for 1 hour 45 minutes, topping up with boiling water when necessary.
- Step 4Remove pan from heat. Carefully lift steamer from water. Stand for 5 minutes. Remove lid. Turn pudding onto a plate. Cut into wedges and serve with cream.Super Food Ideas - June 2012 , Page 94
