Apple Chutney is a surprisingly delicious accompaniment to cheese, especially aged cheddar. The spicy, fruity qualities of the apple chutney and the earthy, sharp
and fruity qualities of the aged cheddar marry together in a delicious and addictive way. This apple chutney can also be paired with a fresh, creamy goat cheese.
Serve chutney and cheese with crackers or thin slices
of baguette.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 1 cup of chutney

Ingredients:

  • 1/2 cup apple cider vinegar
  • 1/4 cup plus 1 tablespoon brown sugar
  • 2 Granny Smith apples, peeled and cut into small pieces
  • 1/4 cup golden raisins
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon cardamom
  • 1/4 teaspoon salt

Preparation:

Simmer 1/4 cup of vinegar and 1/4 cup of brown sugar for five minutes, until the mixture
reduces and becomes dark brown and a bit thicker.
Add the rest of the ingredients (including the remaining 1/4 cup of vinegar and 1 tablespoon
of brown sugar) and continue to simmer, this time with the lid on, for 10 minutes until
apples are soft. Remove the lid and simmer 5 minutes more, or until any remaining vinegar dissolves.
Chill before serving.
