Fresh Tomato Dressing

Combine all of the ingredients in blender and process for about 1 minute, or until the mixture is smooth. Transfer the dressing to a covered container, and refrigerate for several hours before serving.
YIELD: 1-1/2 CUPS
Ingredients
- 1-1/2 medium - ripe tomatoes, chopped
- 1/4 cup - chopped onion
- 2 Tablespoons - honey
- 6 Tablespoons - red wine vinegar
- 3/4 Tablespoon - olive oil, optional
- 1 Tablespoon - chopped fresh parsley, or 1 teaspoon dried
- 3 cloves - garlic
- 3/4 teaspoon - Salt
- 2 teaspoons - ground paprika
- 1/4 teaspoon - ground black pepper
