Put the honey, mustard and salt in a zip-top bag and add the chicken. Let marinate for at least 20 minutes or overnight (if marinating longer than 30 minutes, be sure to keep in the refrigerator). Ingredients

  • Wraps - .
  • 2 tablespoons - honey
  • 2 tablespoons - Creole mustard
  • ½ teaspoon - salt
  • 1 lb. - chicken tenders , (or breasts, cut into slices)
  • 1 - red bell pepper, diced
  • 1 - cucumber, julienned
  • 2 - green onions, diced
  • 1 head - Bibb or Iceberg lettuce
  • Dipping Sauce - .
  • ¼ cup - honey
  • ¼ cup - Creole mustard
  • ¼ cup - low-fat cottage cheese

Directions

Put the honey, mustard and salt in a zip-top bag and add the chicken. Let marinate for at least 20 minutes or overnight (if marinating longer than 30 minutes, be sure to keep in the refrigerator). Meanwhile, combine all the ingredients for the dipping sauce in a food processor or blender and process until completely smooth. Once the chicken has marinated, heat a large non-stick skillet over medium-high heat and add the chicken. Cook for about 5 minutes per side until done. Stir together the bell peppers, cucumber, green onions and cooked chicken. Fill each lettuce cup with chicken and veggie mixture. Drizzle dipping sauce over mixture and serve with any extra dipping sauce on the side.
