Strawberry Pie Recipe

For this strawberry pie recipe, we prepare the filling, which is made up of fresh strawberries tossed in a sweet strawberry glaze, and then pour it into a pre-baked pie shell. The glaze itself is made by mashing up some fresh strawberries and cooking them with sugar, cornstarch and lemon juice.

I think this strawberry pie is best in a graham cracker crust. You can buy one pre-made, but it's super easy to make one yourself. See this recipe for graham cracker pie crust. But it'll be great in any kind of pre-baked pie shell.

Cook Time: 10 minutes

Chilling Time: 2 hours

Total Time: 2 hours, 20 minutes

Ingredients:

  • One 9-inch graham cracker pie shell
  • 2 lbs fresh strawberries
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 Tbsp lemon juice

Preparation:

  1. Remove the hulls from the strawberries, then wash and slice them into quarters.

  2. In a heavy-bottomed saucepan, combine 2 cups of the strawberries and about 1/4 cup of cold water. Mash with a potato masher, then add the sugar, cornstarch and salt. Stir to combine.

  3. Bring the strawberry mixture to a boil, then simmer until it thickens, stirring throughout.

  4. Remove from heat and add the vanilla extract and lemon juice. Transfer the strawberry glaze into a large mixing bowl and let it cool completely at room temperature before you do the next step.

  5. Add the remaining strawberries to the bowl with the glaze and gently stir with a wooden spoon or rubber spatula until all the berries are fully coated with the strawberry glaze.

  6. Now spoon the strawberry filling into your pie shell and chill for at least two hours before you slice it. Serve topped with whipped cream and additional sliced fresh strawberries.
