Pumpkin and Winter Squash Recipes

All up and down my street stoops are lined with pumpkins as Halloween decorations. They are colorful and fun to look at, but those aren't the ones that are best to eat. Pie pumpkins and acorn, butternut, delicata, carnival, kabocha and other winter squash have more flavor and better texture.
You can store winter squash for several months at room temperature if you first wash it clean, dry it thoroughly, and then buff it with a cloth and a dab of vegetable oil. The oil layer prevents mold.
