How to Pickle Cauliflower

Cauliflower is such a mildly flavored vegetable that it is perfect for taking on the flavors and colors of pickling brines. Its texture also holds up well to pickling.
Curried caulflower pickles are the secret ingredient in many of my grain and pasta salads. 24-hour spiced cauliflower pickles are ready to serve to guests the next day. And these festive pink cauliflower pickles get their bright color from a few slices of beet root included with the other ingredients.
Don't have the inclination to take on a pickling project right now? You can blanch and freeze cauliflower and use it in culinary projects later when you have the gumption.
