Roast Pork with Marmalade Glaze

A luscious roast pork with a savory sweet sauce that will delight your family. A scrumptious treat for any holiday or special occasion.

Ingredients

  • 1/4 cup Lea & Perrins® The Original Worcestershire Sauce
  • 1/2 cup Orange juice, divided
  • tablespoon each chopped garlic, fresh thyme leaves & fresh minced ginger
  • pounds pork loin, rib end, slit between the ribs
  • 1/2 cup Orange marmalade

Directions

  1. In a medium bowl, mix together the Worcestershire, 1/4 cup orange juice, garlic and thyme. Add pork and turn until well-coated. Cover and marinate in refrigerator for 30 minutes, or overnight if desired, turning occasionally.
  2. Preheat oven 350°. Remove pork from refrigerator, reserving marinade. Score surface fat in diamond pattern. Place in a large baking dish, scored side up. Season with salt and pepper if desired. Add 1/2 cup water to bottom of pan and roast, uncovered, for 1 hour.
  3. In a medium bowl, combine reserved marinade, orange marmalade, remaining 1/4 cup of orange juice, ginger and 2 tbsp pan drippings. Pour over roast and bake for 45 to 55 minutes, or until internal thermometer reads 160°. Allow to rest for 10 minutes before slicing.
Here's a tip: Ask your butcher to slit the pork between the rib bones for easy carving. If preferred, use a resealable plastic bag for marinating. Discard bag after use. Substitute 1 Tbsp. of fresh thyme and ginger with 1 tsp. of each dried, if desired.
