Rosarita 'Margarita' Dip
Prep Time: 20 minutes Total Time: 20 minutes Serves: 8 servings (1 'margarita' each)
Refried beans, guacamole, zesty tomatoes, cheese, onions and sour cream layered and served in individual stemmed glasses
INGREDIENTS
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, divided
- 1 can (16 oz each) Rosarita® Traditional Refried Beans
- 2 cups guacamole
- 1 cup shredded Cheddar cheese (1 cup = 4 oz)
- 1/4 cup sliced green onions
- 1/2 cup sour cream
- 1/4 cup sliced ripe olives
- Tortilla chips, optional
DIRECTIONS
- Reserve 1/2 cup of the drained tomatoes; set aside. Combine the remaining drained tomatoes and beans in medium bowl; mix well. Spoon bean mixture evenly into eight (4-ounce) martini glasses.
- Divide the guacamole, cheese, reserved tomatoes, onions, sour cream and olives equally in layers over the beans between glasses.
- Insert 1 tortilla chip in dip of each glass for garnish. Serve with additional tortilla chips, if desired.
COOK'S TIPS
- Margarita glasses (8 to 9 ounces) may be used if one would like double-size appetizer portions or appetizers to share.
