Rosarita 'Margarita' Dip

Refried beans, guacamole, zesty tomatoes, cheese, onions and sour cream layered and served in individual stemmed glasses

INGREDIENTS

  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, divided
  • 1 can (16 oz each) Rosarita® Traditional Refried Beans
  • 2 cups guacamole
  • 1 cup shredded Cheddar cheese (1 cup = 4 oz)
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream
  • 1/4 cup sliced ripe olives
  • Tortilla chips, optional

DIRECTIONS

  1. Reserve 1/2 cup of the drained tomatoes; set aside. Combine the remaining drained tomatoes and beans in medium bowl; mix well. Spoon bean mixture evenly into eight (4-ounce) martini glasses.
  2. Divide the guacamole, cheese, reserved tomatoes, onions, sour cream and olives equally in layers over the beans between glasses.
  3. Insert 1 tortilla chip in dip of each glass for garnish. Serve with additional tortilla chips, if desired.

COOK'S TIPS

  1. Margarita glasses (8 to 9 ounces) may be used if one would like double-size appetizer portions or appetizers to share.
