Green Bean Casserole

Yield: 4 to 6 servings
Ingredients
- 1 pound fresh green beans, trimmed and halved
- 2 tablespoons unsalted butter
- 1/2 pound fresh button mushrooms, cleaned and quartered
- Fresh cracked black pepper
- 1/4 teaspoon salt
- 2 cloves minced garlic
- 2 tablespoons flour
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 2 cans French fried onions
Method
- Preheat oven to 425 degrees.
- Boil beans until they are tender by al dente, about 5 minutes.
- Drain beans and run under cold water to stop cooking.
- In a large saucepan over medium high heat, melt butter.
- Add mushrooms, salt, and pepper and cook until mushrooms lose liquid and begin to brown.
- Add garlic and cook for about 30 seconds until garlic releases its scent.
- Add flour and cook, stirring constantly, for about one minute.
- Add chicken broth and stir constantly until liquid simmers.
- Add cream and reduce heat to medium. Stir until liquid thickens.
- Stir beans into sauce.
- Pour into a 9x9 baking dish.
- Top with French fried onions.
- Bake about 15 minutes, until topping is golden and casserole bubbles.
