Coconut Rice Pudding
Coconut Rice Pudding
Ingredients
For the pudding:
One can coconut milk (not the reduced fat one)
One can water
1/4 cup honey
1 cup of arborio or sushi rice
two dried figs (chopped)
1/3 cup of shredded coconut
pinch chili powder
1/2 teaspoon cinnamon
To serve:
4 tablespoons of rum
4 tablespoons toasted coconut
Instructions
Mix all ingredients in a pan with a tight fitting top. Let bake in the oven for at 350 for 30 minutes until until dish is still creamy. To serve stir in 4 tablespoons of rum and top each serving with toasted coconut.
