Red Pepper Hummus
Ingredients
- 3 green onions (root removed)
- 2 cups roasted red peppers (canned in oil and added with the oil)
- 1/3 cup unsweetened peanut butter
- 4 garlic cloves
- 1 tsp hot sauce (or to taste)
- 4 cups cooked chickpeas (aka garbanzo beans)
- 1 cup fresh parsley
- 1 tsp sea salt
- 1/2 cup olive oil
- 1/4 cup cider vinegar
Instructions
- Combine all ingredients in food processor and blitz under smooth.
- Check for seasonings (salt and hot sauce) and let sit for a minimum of 10 minutes to allow the flavours to meld together.
- Serve with pitta, olives and taboulleh for a great light lunch or appetizer.
