MEXICAN "LASAGNA" CASSEROLE

An accidental favorite
INGREDIENTS
1 box Kraft Mac & Cheese Deluxe
1 can diced chili style tomatoes
1 c Morning Star Farms crumbles
1 can refried beans
1 c chopped roasted peppers (hatch)
2 c shredded Mexican cheese

DIRECTIONS
1. Prepare macaroni and cheese according to package directions.
2. Add a handful of shredded cheese to the macaroni mix.
3. In a skillet, combine tomatoes, crumbles, refried beans, and roasted peppers. (medium heat)
4. Combine Mac and Cheese with the skillet mixture. (I put it in a large mixing bowl.)
5. Grease a casserole dish. Put a layer of mixture, crumbled nachos, then cheese. Repeat with the other half of the mixture, then crumbled nachos, and top with the rest of the cheese.
6. Bake at 350 degrees for 20 minutes.
