LOUISIANA CHOCOLATE CAKE

Chocolate cake topped with cooked chocolate icing.
INGREDIENTS
2 c plain flour
1/2 c cocoa
1 tsp baking soda
2 c sugar
3/4 c shortening
eggs
3/4 c buttermilk
3/4 c boiling water
1 tsp vanilla
COOKED CHOCOLATE ICING
1 1/2 c sugar
7 Tbs milk
2 Tbs cocoa
1 Tbs corn syrup
4 Tbs butter
1 tsp vanilla
 
DIRECTIONS
1. Sift flour, cocoa, and soda together.
2. Cream sugar and shortening. Add unbeaten eggs.
3. Add the dry ingredients along with the buttermilk. Add boiling water then the vanilla.
4. Mix well; pour into 9 x 13 greased cake pan.
5. Bake at 350 degrees for 30 minutes.
6. To make icing: Boil ingredients except for vanilla for 1 minute. Beat until they are the right consistency for spreading on a cake then add the vanilla. Mix and spread. (Doubling this recipe is recommended.)
