Red Pepper Hummus


Red Pepper Hummus

Ingredients
  • 3 green onions (root removed)
  • 2 cups roasted red peppers (canned in oil and added with the oil)
  • 1/3 cup unsweetened peanut butter
  • 4 garlic cloves
  • 1 tsp hot sauce (or to taste)
  • 4 cups cooked chickpeas (aka garbanzo beans)
  • 1 cup fresh parsley
  • 1 tsp sea salt
  • 1/2 cup olive oil
  • 1/4 cup cider vinegar
Instructions
  1. Combine all ingredients in food processor and blitz under smooth.
  2. Check for seasonings (salt and hot sauce) and let sit for a minimum of 10 minutes to allow the flavours to meld together.
  3. Serve with pitta, olives and taboulleh for a great light lunch or appetizer.
