Three Easy Clam Recipes for Your Next Tapas Party

If you like clams and are looking for a simple tapa or first course, these easy Spanish clam recipes are perfect. First, clams in a sherry sauce, made by sautéing the chopped onion and garlic, adding sherry, clams and parsley, and briefly simmering until cooked. Murcian-style Clams are prepared in a simple sauce made of white wine, sweet paprika, garlic, onion, and red pepper flakes, which gives the sauce a little "bite." The third clam dish is a Spanish classic - clams in green sauce. Clams cooked in a flavorful sauce of garlic, onion and white wine, sprinkled with minced parsley. All three of these clam dishes are easy to prepare. In fact, a novice cook can prepare any of them. Serve with your favorite Spanish wine, and rustic bread as atapa or a first course.
