Spanish Rabbit in Mushroom and Almond Sauce

If you've never tasted domesticated rabbit, we think you are missing out. It is higher in protein and lower in fat than chicken - and tastes great, too! No gamey flavor in domesticated rabbit. For this stew - First, saute the cut rabbit, then simmer in onion, garlic and tomato. Then, thicken the sauce with ground almonds. Finally, add oyster mushrooms in the last few minutes of cooking. Serve with home-fried potatoes.
