The
vieira or scallop, enjoys a special place with the people of
Galicia, and is the symbol of the pilgrims to Santiago de Compostela. Scallops are plentiful, very sweet and delicious in Galicia. First, saute onions, then mix in shrimp and make a simple béchamel sauce. Spoon the mixture onto open scallop shells, sprinkle with bread crumbs and bake. Easy to make for a main course, or as an appetizer at a holiday party.
