TEXAS STYLE MASHED POTATOES
Ingredients:
- 6 medium potatoes (about 2 lbs.), peeled and quartered
- 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies
- 1 container (8 oz.) low fat dairy sour cream
- 1/2 cup shredded cheddar cheese
Preheat oven to 325 degrees F. Cook potatoes in boiling water until
tender, about 20 minutes; drain. In a large bowl, with an electric mixer
on low speed, beat potatoes, RO*TEL and sour cream until smooth.
Spoon into a 2-quart baking dish. Bake 25 minutes, sprinkle with cheese.
Bake an additional 5 minutes or until cheese melts. Makes 7 one cup servings.
