Panellets & Huesos de Santo, Traditional Spanish Sweets for All Saints Day

Panellets are a traditional sweet from the region of Cataluña, prepared for Dia de Todos los Santos or All Saints Day, celebrated annually on November 1st. They are served with moscatel wine orcava, Spanish sparkling wine. Panellets are delicious, especially if you like almonds and make a great addition to your collection of cookie recipes. Panellets are made of equal parts ground almonds and sugar. They are formed into balls and decorated in a variety of ways - rolled in pine nuts or cocoa powder, candied cherries or coconut flakes. They can also be flavored with coffee or cinnamon. The most popular type is the classic one rolled in pine nuts.
The Spanish in all regions eat a sweet called huesos de santo, or "saint's bones," which are little tubes made of marzipan, filled with a sweet egg yolk paste. Sometimes pastry shops may use other fillings and cover them with syrup. These "bones" are a bit tricky to make, but definitely worth the practice!
