GRANDMA'S SWEET BUTTER CAKE

GRANDMA'S SWEET BUTTER CAKE 
2 pkgs. dry yeast
1/2 c. warm water
1/2 c. lukewarm milk
1/2 c. sugar
1 tsp. salt
2 eggs
1/2 c. butter, softened
4 1/2 - 5 c. bread flour


Dissolve yeast in warm water. Stir in milk, sugar, salt, eggs, butter and 2 1/2 cups flour; beat until smooth. Mix in enough flour to make dough easy to handle. Turn onto floured board and knead until smooth and elastic. Let rise. Knead and divide in half and place in greased round cake pans. Cover with streusel topping (below) and let rise.


STREUSEL TOPPING:

Mix flour, brown sugar and softened butter together until fine.


SWEET BUTTER FILLING:

Mix 4 cups of butter with 2 cups of powdered sugar.Bake at 375 degrees for 35 to 40 minutes and let cool. Slice cooled cakes in half horizontally and butter with half the filling on each about 1/4" thick. Serve or refrigerate overnight.
