COTTAGE CHEESE CROQUETTES WITH GRAVY

COTTAGE CHEESE CROQUETTES WITH GRAVY 
1/4 - 1/2 c. minced onion
1 tbsp. oil
2 c. cottage cheese
3 eggs, beaten
1 c. soft whole wheat bread crumbs
1 3/4 c. dry bread crumbs
1/4 c. nuts, chopped (optional)
1 tbsp. McKay's chicken seasoning
2 tbsp. yeast flakes (optional)
1/2 tsp. sage
1/2 tsp. thyme
1/2 tsp. salt


Saute onion in oil until soft. Combine all remaining ingredients with onion. Place mixture in refrigerator to form for approximately 1 hour. (May leave overnight if desired). Form into croquettes and place in oiled baking dish. Place in 350 degree oven until croquettes are brown. Cover browned croquettes with gravy (recipe following) and bake at 350 degrees for 20 to 30 minutes or until the centers are thoroughly done. Serves 8. Variation: Low fat tofu croquettes. Replace eggs and cottage cheese with 1 pound regular firmness tofu, blended until smooth.
